So what do you do when you can't sleep at night? You work on perfecting your Banana Bread recipe! That's what I did on these two small loaves. I didn't puree the bananas as much, and I left a few less ripened pieces in. This seemed to have made a more rustic texture. I also baked them with a generous layer of Turbinado Sugar on top making a sweet crunchy top. Have a great weekend everyone!
Whole Wheat Banana Bread with Butter and Cinnamon Milk. This quick bread has 50/50 of whole wheat flour and unbleached AP flour, brown sugar and heavy on the ripe bananas. It has a crispy Turbinado Sugar topping. This recipe came from King Arthur Baking Company Baker's Companion Book. I hope everyone is having a great weekend!
