To make boxty Irish Potato Cakes, you need to mix grated raw potatoes with cooked mashed potatoes. They are tasty and comforting as a side dish or breakfast food because they are crispy on the outside and soft on the inside.
Ingredients: 2 cups grated raw potatoes. 1 cup cooked mashed potatoes. 1 cup all-purpose flour. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/2 cup buttermilk. 2 tablespoons melted butter. 1/2 teaspoon baking powder. Butter or oil for frying.
Instructions: Scrub the raw potatoes with a clean kitchen towel and squeeze out as much water as you can. Grate the potatoes, mash the potatoes, add the flour, salt, and black pepper to a bowl. Combine well. Mix the buttermilk, melted butter, and baking powder in a different bowl using a whisk. Add the buttermilk mix to the potato mix and mix it in until you get a thick batter. Put a skillet or griddle over medium-high heat and coat the bottom with a little butter or oil. Spread out rounds of the potato batter by dropping spoonfuls of it onto the hot pan. It should take about 4 to 5 minutes per side to cook until both sides are golden brown and crispy. Place the cooked Boxty potato cakes on a plate with paper towels around the edges to drain any extra oil. You can top it with sour cream, chives, smoked salmon, or anything else you like. Serve it hot.
