My family's recipe is a bit weird because we use spelt flour and don't add any brown sugar. But if you want to make it more traditionally you need to use white flour that's high in gluten and add some sugar into it, I'm just not sure how much sugar because I never made it with sugar myself.
I love making jachnun more than I like eating it, which is an achievement because I love eating it.
