These delightful Easy Jam Tarts are ideal as a tea time snack or as an afternoon tea. The combination of the sweet jam and buttery pastry is delicious. You can tailor these tarts to your preferences by using your favorite jam flavor.
Ingredients: 1 1/4 cups all-purpose flour. 1/4 cup granulated sugar. 1/2 cup unsalted butter, cold and cubed. 1 egg yolk. 2 tablespoons ice water. 1/2 cup your favorite jam e.g., strawberry, raspberry. Powdered sugar for dusting optional.
Instructions: In a food processor, combine the flour and granulated sugar. Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs. In a small bowl, whisk the egg yolk with ice water. Add this mixture to the food processor and pulse until the dough starts to come together. Turn the dough out onto a lightly floured surface and knead it a few times to bring it together. Shape it into a disc, wrap in plastic wrap, and refrigerate for 30 minutes. Preheat your oven to 350F 175C and grease a 12-cup tart tin. Roll out the chilled dough on a floured surface to about 1/8 inch thickness. Using a round cookie cutter or a glass, cut out 12 circles and gently press them into the tart tin, making sure they cover the bottom and sides. Place a teaspoon of your favorite jam into each tart shell. Bake in the preheated oven for 15-18 minutes or until the pastry is golden brown. Remove the tarts from the oven and let them cool in the tin for a few minutes before transferring to a wire rack to cool completely. Optional: Dust with powdered sugar before serving.
