Spring is for foraging young plants and one of them is udo (独活/うど/Aralia cordata/Japanese spikenard). Wild udo is more green and we eat the young plants. Farmed udo is grown underground to keep its white color by preventing photosynthesis and the development of chlorophyll. The difference in taste of wild and farmed udo is that white udo is less bitter. #araliacordata #plants #botanical #ruraljapan #ウド #うど #japanfarm #tochigi #栃木 #大田原 #otawara #japanvegetable #JapanRevealed #hiddenjapan #remotejapan https://www.instagram.com/p/BwdX6tmH7zJ/?utm_source=ig_tumblr_share&igshid=1do199dl8awhf
