Spring is for foraging young plants and one of them is udo (独活/うど/Aralia cordata/Japanese spikenard). Wild udo is more green and we eat the young plants. Farmed udo is grown underground to keep its white color by preventing photosynthesis and the development of chlorophyll. Ojou’s offensive line!
One of the members of my host family took me to see Unganji, a temple in Otawara. The history of the temple goes back several hundred years. I am thankful for his enthusiasm in sharing the culture and history of his region.
