This easy pepper jelly is fabulous for appetizers, glazes, and gifts. It's sweet and spicy, perfect for adding a kick to your favorite dishes.
Ingredients: 4 cups bell peppers, finely chopped. 1 cup jalapeo peppers, finely chopped. 1 1/2 cups apple cider vinegar. 6 cups granulated sugar. 1 packet liquid pectin. 1/2 teaspoon salt.
Instructions: Add the bell peppers, jalapeo peppers, and apple cider vinegar to a large pot. Over high heat, bring the mixture to a boil while stirring frequently. After it reaches a boil, lower the heat to medium and simmer for ten minutes. Add the powdered sugar and cook, stirring constantly, until the mixture registers a candy thermometer reading of 220F 104C. Take the pot off of the burner and mix in the salt and liquid pectin. Skim any foam that may have formed on the jelly's surface. Once the jars have been sterilized, fill them with the hot pepper jelly and cover them. To make sure the jars are properly sealed, process them for ten minutes in a water bath canner. Before putting the jars in a cool, dark place, let them cool. Use the pepper jelly as an excellent garnish for crackers and cream cheese, a glaze for meats, or a tasty addition to appetizers. It's a fantastic homemade gift as well!
