Whether you have fresh grapes or grape juice on hand, savor the deliciously sweet and fruity flavor of homemade grape jelly. This recipe will walk you through the process of creating your own delectable grape jelly that you can use in a variety of recipes, on toast, or with cheese.
Ingredients: 4 cups fresh grapes or 4 cups grape juice. 4 cups granulated sugar. 1 package 1.75 oz fruit pectin. 1/2 teaspoon butter optional, to reduce foaming.
Instructions: Wash and stem the grapes. Crush them using a potato masher or food processor. Place the crushed grapes in a large pot and add the fruit pectin. Stir well. If using fresh grapes, bring the mixture to a boil and then simmer for 10 minutes, stirring occasionally. If using grape juice, skip to the next step. Add the granulated sugar and butter if using to the grape mixture. Stir continuously until the sugar is completely dissolved. Bring the mixture to a rolling boil over high heat, stirring constantly. Boil for 1-2 minutes or until the jelly reaches the desired consistency it should coat the back of a spoon. Remove the pot from heat and skim off any foam on the surface. Pour the hot grape jelly into sterilized jars, leaving a 1/4-inch headspace at the top. Seal the jars tightly with lids. Process the sealed jars in a boiling water bath for 10 minutes to ensure proper sealing and preservation. Allow the jars to cool at room temperature. Once cool, check the seals by pressing the center of each lid. If it doesn't pop back, it's sealed properly. Label and store the grape jelly in a cool, dark place. It will continue to thicken as it cools.

A tasty homemade muscadine jelly recipe that can be prepared with or without a hint of heat from jalapeo peppers.
Ingredients: 4 cups of muscadine grapes. 4 cups of granulated sugar. 1 packet of fruit pectin. Optional: 1-2 jalapeo peppers for pepper version.
Instructions: Remove the stems and wash the muscadine grapes. Use a potato masher or a spoon to crush the grapes in a big pot so that the juice can be released. Finely chop the jalapeo peppers and add them to the crushed grapes if you're making pepper jelly. With occasional stirring, place the pot over medium-high heat and bring the grapes as well as the peppers to a boil. After it reaches a boiling point, lower the heat to a simmer for ten minutes. To keep the fruit from clumping, combine 1/4 cup sugar with the fruit pectin in a different bowl. Once the grapes and peppers are added to the pot, stir in the pectin-sugar mixture and return to the boil for one to two minutes, or until the jelly thickens. If any foam appears on the surface, skim it off. After taking the pot off of the burner, give it a minute to cool. Make sure to leave 1/4 inch of headspace when ladling the hot jelly into sterilized jars. If preserving, place the jars in a boiling water bath for 10 minutes after sealing, or if using right away, allow them to cool and refrigerate. After cooling, the jelly will solidify. Savor your homemade jelly with muscadine!

So we have a boysenberry bush out in the backyard (grown from a store-bought plant, obviously). We have had some decent harvests over the last few years, but due to the rain this year, we had a bit of a bumper crop.
I have attempted to make jelly a couple of times before with our berry harvests, but it always turned out way too thick, and thus impossible to spread without destroying the thing you were trying to put it on.
This year, though! I managed to turn 2 pounds, 11 ounces (about 1.2 kilograms) of berries into two half pint (236ml) jars of boysenberry jelly! And it turned out! I can spread it easily onto toast!! And it’s fucking DELICIOUS!!!!
It has a slightly jammy texture (which is probably due to accidentally dropping the jelly bag into the bowl of juice while I was draining the cooked fruit 😬), but it spreads! It eats!! It’s GOOD SHIT and I am SO PROUD OF MYSELF!!!!!
