You can eat these Vegan Jerk Sweet Potato and Black Bean Burgers for a satisfying plant-based meal. They are full of flavor and protein. When you mix sweet potatoes, black beans, and spices together, you get a deliciously unique burger.
Ingredients: 2 large sweet potatoes, peeled and diced. 1 can black beans, drained and rinsed. 1 cup cooked quinoa. 1/2 cup breadcrumbs gluten-free if needed. 1/4 cup chopped cilantro. 2 tablespoons jerk seasoning. 1 teaspoon garlic powder. 1 teaspoon onion powder. Salt and pepper to taste. 1 tablespoon olive oil.
Instructions: Preheat oven to 375F 190C. In a pot of boiling water, cook sweet potatoes until tender, about 10-15 minutes. Drain and mash in a large bowl. Add black beans to the bowl and mash slightly, leaving some beans intact for texture. Stir in cooked quinoa, breadcrumbs, cilantro, jerk seasoning, garlic powder, onion powder, salt, and pepper until well combined. Divide the mixture into 6 equal portions and shape into burger patties. Brush each patty lightly with olive oil and place on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until burgers are firm and golden brown. Serve on buns with your favorite toppings.
