Dear Himanshu, I would like to know when and how to consider use both hands mudras similarly or differently.
The therapeutic mudras are practiced with both the hands. The mudras are held in a symmetric way. For example, the tip of the ring finger is in contact with the thumb in Prithvi mudra for both the hands. There are exceptions. For example, the tip of middle finger is in contact with the thumb in left hand and tip of ring finger is in contact with the thumb in right hand in Joints mudra. Surabhi mudra is another such exception.
Mudras in traditional dance forms and religious customs have patterns that are not symmetrical. The purpose of these mudras is to invoke energies of presiding deity in religious customs associated with the deity. There are numerous mudras in Hinduism and Buddhism that are specific to a custom.
In dance forms, the mudras are used to portray emotions associated with an act. You can find such mudras in classical dance forms like bharatnatyam, odissi, kuchipudi and kathakali.
