This Asian-style dumpling soup is a comforting and satisfying meal. The combination of juicy dumplings and flavorful broth, along with the fresh vegetables, makes it a delicious choice for any time of the year.
Ingredients: 1 cup ground pork. 1/2 cup minced shrimp. 2 cloves garlic, minced. 1 tablespoon ginger, minced. 2 green onions, finely chopped. 1/4 cup soy sauce. 1 tablespoon sesame oil. 1 teaspoon sugar. 1/2 teaspoon white pepper. 1 package store-bought dumpling wrappers. 6 cups chicken broth. 2 cups water. 1 cup bok choy, chopped. 1/2 cup mushrooms, sliced. 1 carrot, thinly sliced. 1/2 cup snow peas, trimmed. Salt, to taste. Black pepper, to taste.
Instructions: Ground pork, shrimp, garlic, ginger, green onions, soy sauce, sesame oil, sugar, and white pepper should all be mixed together in a bowl. To make the filling for the dumplings, mix it well. Put a little filling in the middle of each dumpling wrapper. Spray water along the edges of the wrapper and fold it in half to make a half-moon shape. To seal the dumplings, press the edges together. Boil water and chicken broth in a big pot. After you add the mushrooms and sliced carrot, let it cook for 5 minutes. Put the dumplings in the broth that is already simmering. Cook for 5 to 7 minutes, or until they float to the top and are fully cooked. Add the snow peas and bok choy and stir them in. Cook for another two to three minutes, until the vegetables are soft. To taste, add salt and black pepper to the soup. If you want, you can top the hot Asian dumpling soup with extra chopped green onions.
