A creamy and hearty New England clam chowder with tender clams, bacon, and potatoes, perfect for warming up on a chilly day.
Ingredients: 2 slices bacon, chopped. 1 onion, finely chopped. 2 celery stalks, diced. 3 cups potatoes, peeled and diced. 2 cups clam juice. 3 cups chopped fresh clams. 2 cups whole milk. 1 cup heavy cream. 3 tablespoons all-purpose flour. Salt and pepper to taste. 2 tablespoons butter. 1 bay leaf. 1/4 cup fresh parsley, chopped.
Instructions: Cook bacon in a big pot until it gets crispy. Take the bacon out of the pot and set it aside. Leave the fat in the pot. Chopped onion and celery should be added to the pot and cooked until soft. To make a roux, stir in the flour and cook for one to two minutes. Slowly whisk in the clam juice, making sure there are no lumps left. Put in the bay leaf and potatoes. Keep cooking until the potatoes are soft. Add the heavy cream, milk, and clams and mix well. Add pepper and salt. Simmer until everything is hot. Take out the bay leaf and add the butter. Before serving, sprinkle chopped bacon and parsley on top.
