This Coffee Rub Prime Rib is a tasty and juicy dish that is great for a holiday or special occasion. The crust is rich and fragrant from the coffee and spices, and the prime rib roast stays juicy and tender on the inside. It doesn't have gluten and will wow your guests!
Ingredients: 1 4-5 pound prime rib roast, bone-in. 2 tablespoons finely ground coffee. 2 tablespoons brown sugar. 1 tablespoon paprika. 1 tablespoon garlic powder. 1 tablespoon onion powder. 1 tablespoon salt. 1 tablespoon black pepper. 2 tablespoons olive oil.
Instructions: Preheat oven to 450F 230C. In a small bowl, mix together ground coffee, brown sugar, paprika, garlic powder, onion powder, salt, and black pepper to make the rub. Rub olive oil all over the prime rib roast. Coat the prime rib roast evenly with the coffee rub mixture, pressing it onto the surface. Place the roast on a rack in a roasting pan, fat side up. Roast in the preheated oven for 15 minutes. Reduce the oven temperature to 325F 160C and continue roasting for about 1 hour or until a meat thermometer inserted into the thickest part of the roast registers 135F 57C for medium-rare. Remove the roast from the oven and let it rest for 15 minutes before carving. Slice the prime rib roast and serve.
