Ingredients: 2 cups all-purpose flour. 1/2 cup vegan butter, softened. 1/2 cup granulated sugar. 1/4 cup unsweetened applesauce. 1 teaspoon vanilla extract. 1/2 teaspoon baking powder. 1/4 teaspoon salt.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a large mixing bowl, cream together the vegan butter and sugar until smooth and creamy. Add the applesauce and vanilla extract, and mix until well combined. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Transfer the dough to a lightly floured surface and roll it out to about 1/4 inch thickness. Use cookie cutters to cut out shapes from the dough and place them onto the prepared baking sheet. Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden brown. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Once cooled, decorate the cookies with icing or sprinkles if desired.
