In Ubon Ratchathani province in Northeastern Thailand I met Khun Samchai. Of Chiense descent, he owns and runs coffee chops and restaurants in Ubon and Warin where he sells some excellent kai krata, eggs fried in a small pan and served with different types of sausages and herbs and a bread roll; joke, a thick rice soup with pork balls, fresh ginger, coriander and with an egg dropped in for good measure; moo yor, an Isan specialty pork sausages with origins in Vietnam; gun chiang, sweet pork sausage originally from China and kafae bolan, which is a sweet hot coffee.
