Ingredients: 1 tbsp olive oil. 1 medium onion, diced. 3 cloves garlic, minced. 1 inch fresh ginger, grated. 1 red bell pepper, diced. 1 sweet potato, peeled and diced. 1 15-ounce can chickpeas, drained and rinsed. 4 cups vegetable broth. 1/2 cup creamy peanut butter. 1 14-ounce can diced tomatoes. 1/4 cup tomato paste. 1 tsp ground cumin. 1/2 tsp ground coriander. 1/2 tsp smoked paprika. 1/4 tsp cayenne pepper optional. Salt and pepper, to taste. 2 cups chopped kale. Cooked rice, for serving. Chopped cilantro, for garnish. Crushed peanuts, for garnish.
Instructions: In a large pot, heat olive oil over medium heat. Add onion, garlic, and ginger. Saut until fragrant, about 3 minutes. Stir in bell pepper, sweet potato, and chickpeas. Cook for 5 minutes, stirring occasionally. Add vegetable broth, peanut butter, diced tomatoes, tomato paste, cumin, coriander, smoked paprika, cayenne pepper if using, salt, and pepper. Stir well to combine. Bring the stew to a simmer, then reduce heat to low. Cover and let it cook for 20-25 minutes, or until sweet potatoes are tender.
