First lunch with Lo the Dowager Allen this New Decade on the day Prince Harry and Meghan step down as “Senior Royals.” After recent excursions to Japan, Ippudo is where Dowager wants to park his derriere. Uncle has made his feelings known about Ippudo. Best Ramen but service lags. Dowager tells Uncle to get over himself - we’re here to have great ramen, not expect miracles on the service front. Our Ippin of Cucumber and Gyoza are fabulous. The Spicy Goma is slightly pickled cucumber topped with special chilli sauce, crunchy garlic & Sichuan pepper - For ramen Dowager had Karaka-Men and Uncle the Veggie Soba. The Karaka Men is thin & wavy ramen in Ippudo’s original tonkotsu broth served with simmered pork belly, bean sprouts, spring onions and topped with a spicy pork miso and roasted cashew garnish. Uncle’s Vegie Soba is served in original vegetable bouillon blended with porcini dashi. It’s all plant-based and thoroughly slurping good but Uncle found there was a bit of an oil slick rising to the surface. Ok, as Dowager points out, you don’t need inattentive waitstaff to fawn over you to enjoy good food. And said waitperson ran after Uncle with his phone which he had absentminded left on dining situ. I P P U D O at Rooftop, Westfield, Newmarket. Uncle Charles (Home Alone) took the train from his Gabela enclave in Glendene to Newmarket, to meet Uncle at Ippudo. There is a queue but it didn’t take long to clear. The welcome and service is still perfunctory but hey, we’re here to try their famous ramen. We have Karaage Chicken to start - it lived up to crunchy expectations, with the shichimi pepper mayonnaise. The ramen’s tonkotsu pork stock was up there in flavour and richness. Uncle Charles’ Karaka-Men has wavy ramen served with simmered pork belly, beansprout, spring onions topped with ground pork miso and roasted cashew garnish. The ramen firmness was dailed to soft. Uncle had the Akamaru Shinaji - the tonkotsu broth is enhanced with miso paste, fragrant garlic oil (which adds depth & richness). The thin noodles (done futsu/medium) is served with pork belly, beansprouts, black fungus & spring onions. Akamaru Shinaji is a truly refined modern Hakata-style ramen. Uncle Charles & his dining companion can’t really fault the ramen at Ippudo. I P P U D O Uncle’s Singapore foodie friend told him that the only ramen place to go is Ippudo on Orchard Rd. He went and has been converted ever since. So when Ippudo announced that they were opening their first eatery on Rooftop at Westfield, Broadway, Newmarket, Uncle was very excited. He went on the second day of their opening and the fanfare was worth it. He had the Karaka-Men, Ippudo’s famous original tonkotsu broth with thin & wavy noodles served with simmered pork topped with special spicy ground pork miso and toasted cashew garnish. Ippudo’s famed ramen is heralded by the tonkotsu broth that is created from the elaborate cooking of different cuts of pork bones - the resultant broth is rich and creamy. Diners can have options for ”doneness” of their ramen: soft (yawa), medium (futsu), hard (kata) and very hard (bari kata). Uncle chose the futsu; it is the perfect finish for the Karaka-Men. Observations: Uncle had great expectations of Ippudo. His previous experiences elsewhere cannot be faulted. Granted it's early days but the ”hospitality” has gone slightly amiss with a largely young waitstaff.
