Pour milk into a microwave safe measure. Add gelatin; set aside for 5 minutes to allow gelatin to soften. Microwave for 15 seconds or until gelatin melts into milk. 2. Meanwhile, in a saucepan, combine half & half, vanilla bean pod and seeds, honey and sugar in a medium pan and bring to a boil. Remove from the heat. Remove vanilla bean pod. Add the melted gelatin-milk-mixture to the pan and stir until completely dissolved. Whisk in labne. Pour mixture into a fine mesh sieve over a bowl with a spout or a large measuring cup. Pour the mixture evenly among 8 (4-ounce) glasses, leaving about 1/2 inch of space between it and the rim. Chill at least 3 hours in the refrigerator. 3. To make the honey gel, combine 2 tablespoons of water and the gelatin in a microwave safe measure. Set aside for 5 minutes. Microwave 15 seconds or until gelatin is melted. 4. Meanwhile, combine remaining water and honey in a pan and bring to a simmer, stirring well. Remove from the heat. Add the gelatin mixture to it and stir until it is completely dissolved. 5.
