Is it true that doctors working in undeserved rural areas can get most if not all of their med school loans forgiven/paid for?
Yes. It’s usually based on how many years you serve, and it depends on the state or area you’re in. There are both state and national programs for this (though not every state has a program). The ones I’ve seen will typically pay $25,000 a year for up to 4 years or $50,000 all at once for a 2 year commitment. So it probably won’t pay allllll of your loans, but it pays a nice chunk. Also, many hospitals in underserved areas will also offer some loan repayment on top of public programs.
Edit: there are programs you can sign up for in med school (so you don't incur so much debt to start with), residency, or post graduation. I opted not to sign up in medical school because if you back out of the programs, you often owe back double or triple what they provided you.
