Keto Chocolate Glazed Donuts For the Donuts 1 1/4 cup almond flour 6 tbsp whole psyllium husk (grounded in a coffee grinder. I'm unsure about the equivalent amount of psyllium powder) 2 tsp baking powder 2 tbsp Swerve granulated Pinch of salt 1/4 tsp cinnamon 1/2 tsp xanthan gum 3 egg whites 1 cup boiling water 1 tsp liquid stevia drops 1/4 tsp vanilla extract 2 tsp rice vinegar (this is the only kind I have on hand) For the Glaze 3 egg yolks 1/3 cup unsweetened vanilla almond milk 120 chips (60g) Lily's dark chocolate chips 1 1/2 tbsp of Swerve 1 tbsp cacao powder or unsweetened cocoa powder (I honestly don't know what the differences are) Liquid stevia drops to taste (if you want it sweeter or not) Directions Preheat the oven to 350° F Mix all the dry ingredients together until fully incorporated Bring water, vanilla and liquid stevia to a boil While the water is boiling, separate three egg whites. Set the yolks aside to save for later Once the water comes to a low boil, add it to the dry ingredients while mixing with a hand mixer Add the egg whites and vinegar to the mixture while mixing and set aside for at least a few minutes Grease or use a silicon donut/bagel tray Wet your hands and roll the dough into 6 logs like you would with playdoh Place the dough into each donut spots in your pan making sure the ends overlap so they are closed circles. Bake in the oven for 50 minutes Remove and let the donuts cool to room temperature While the Donuts cool, whisk your sweeteners, cacao powder and egg yolks together Place a bowl over a pot of low boiling water (double pot action!) and add your unsweetened almond milk and chocolate chips, stir continuously until it turns into a chocolate sauce.
