This Strawberry Basil Chia Jam is low in carbs, paleo-friendly, and sugar-free, so it can be used instead of regular jam. It tastes like fresh strawberries and is made even better with the smell of basil. You can spread it on your favorite keto breads, yogurt, or desserts and enjoy it.
Ingredients: 2 cups fresh strawberries, hulled and chopped. 2 tablespoons chia seeds. 2 tablespoons fresh basil leaves, chopped. 1-2 tablespoons keto-friendly sweetener such as erythritol or stevia, to taste. 1 tablespoon lemon juice.
Instructions: In a saucepan, combine the strawberries, chia seeds, basil, sweetener, and lemon juice. Cook over medium heat, stirring occasionally, until the strawberries break down and the mixture thickens, about 10-15 minutes. Remove from heat and let cool for 5 minutes. Transfer the mixture to a blender or use an immersion blender to blend until smooth, if desired. Pour the jam into a jar or container and let it cool completely before refrigerating. The jam will continue to thicken as it cools. Store in the refrigerator for up to 1 week.
