Today was a fail. It all started when I went to lunch with my friends at a carribean restaurant. Before I went, I scanned the menu online and planned to order the jerk chicken. I ended up actually ordering that & it was good and leto friendly (minus the honey lime glaze that I tried to avoid) but I ended up eating some chips and queso that they ordered as an appetizer. I also ate half of a incredibly good small cornbread biscuit.
Then I decided I wanted to make some low carb muffins for breakfast so I would have something quick to eat in the morning. They were so so nasty, I ended up throwing them away. I've had such incredibly bad luck with cooking low carb. I made pancakes yesterday and they were gag worthy. So for dinner I was kinda done trying and ended up eating 25 carbs over my limit today :/
After scrolling through topics on the reddit keto site I found a chocolate mug cake recipe & I happened to have all the ingredients so why not! I didn't love it but it was def the most successful of all the recipes I have tried. It had the texture of cake but was a little too much bitter chocolately and not enough sweet. I ate about half.
So I am expecting to be out of ketosis after a fail of a day. And probably gained some weight. In order for me to be able to continue on this diet it is going to be crucial for me to find go to meals that I genuinely enjoy. So far the only one I have is a caesar salad lol. Any suggestions? I am def not giving up. Day 5 here I come.
