Flourless Brownie Recipe
It's literally the easiest thing I've ever made, and it's pretty customizable, and it shouldn't work but man does it ever. I got this recipe when I was told to go gluten-free for a while to see if that was the problem, but when I went back to eating gluten I kept making these because these are genuinely better than standard brownies.
Ingredients:
3 eggs 3/4 cup/175mL white sugar (I've used brown once, and it actually made it too sweet for my tastes, but YMMV) 1/2 cup/125mL unsweetened cocoa powder (double-check that this is GF if this is a concern, since apparently some aren't) 3/4 cup/175mL chocolate chips (I use dark chocolate if I can grab 'em, otherwise semisweet works wonders as well, and also I usually probably put in closer to a cup because I intentionally let my measuring cup overflow. I keep meaning to try this recipe with butterscotch chips and see how the mixture works.) 1/2 cup/125mL butter/margarine (I think I've always used margarine, but just vegetable oil works as well if you're in a pinch!) Whatever other things you wanna add! I've added flavoured extracts (I'm amazed that there's no vanilla in this recipe, but it... actually doesn't really add much?), I added walnuts once. Y'know, whatever.
Directions:
Preheat the oven to 300F/150C.
Beat the eggs, and then add in the sugar and cocoa powder. In another microwave-safe bowl, melt the chocolate chips and butter/margarine together (I nuke it for 45 seconds and then just stir a bunch and it all gets melted).
Mix the two bowls well (if you're gonna add anything else, do it here!), pour it into a greased cake pan (I think the recipe I got this from calls for a 9" cake pan but I use an 8" square one and it just means I leave it in slightly longer), and then throw it in the oven until a toothpick poked into the centre comes out clean.
The recipe says half an hour, but I usually don't even bother checking until 40 minutes and one batch decided to take 55. If you're not sure, another 5 minutes won't hurt, I promise.
Let them cool, cut them up, eat an entire batch before you realize what you've done, but then oh well these are the easiest fucking brownies ever. Make another batch for whatever the first was supposed to be for.
