Everyone knows the power of Kitchen Finks, even in EDH. It’s a 3/2 creature with a 2 point life gain for 3 mana, a solid price for what you get. Of course, it’s persist that makes this card insane to use, as you’ll gain another 2 life and be left with a 2/1 body if you’re playing fair. Of course, if you’re using Kitchen Finks there’s a solid chance that you have synergy or a combo to keep gaining life to a large degree or to an arbitrarily large amount through combos like a free sac outlet and Vizier of Remedies, or a few other combos that work like with Mikaeus the Unhallowed. If you’re going to be putting things in and out of the graveyard, Kitchen Finks are by no means a bad choice.
Do cards with Persist work with the recently spoiled Nest of Scarabs?
Yes, if you controlled the creature when it died and thus controlled the persist trigger.
When a creature with persist enters the battlefield under your control with a -1/-1 counter on it, the player who controlled the persist trigger is considered by the game to have placed the counter on it. If that’s you, then Nest of Scarabs triggers and gives you an insect token when the trigger resolves.

Let's say I have Fauna Shaman on the table, I tap one green and discard Kitchen Finks to look for Melira, Sylvok Outcast. Do Finks return from grave with or without -1/-1 counter?
They don’t return to the battlefield at all because they were never on the battlefield at all. Persist only triggers when the creature goes from the battlefield to the graveyard.
