Pork adobo with ripe banana and a combo of red and black rice. I did this adobo a little different than my usual adding achiote, ripe bananas and coconut sugar, and then lessened the amount of soy sauce and vinegar. The pork was pork shoulder. It was super tender, a more delicate but delicious flavor and the bananas provided a nice tang.
