After visiting a bunch of different guitar shops in LA, ended up driving out to Glendale to try @raffisplace. The wait was a little long and the food was a little pricey, but it was amazing tasting and the atmosphere is very nice. This is their Chicken Soltani plate. I've always wanted a real handmade high quality Japanese knife. I finally bought one for my birthday a few months back. This beauty is the Gokaden Super Blue Steel 8 inch Kiritsuke Knife from the fine people at @hitachiyausa5413 As soon as I bought this piece, the owner and master blade polisher #masazumihirota took me into the workshop area of the store and gave me a 10 minute brush up on knife polishing. It is a stunning piece of craftsmanship and an absolute dream of a blade. Unfortunately, I haven't had much of a chance to use it since purchase because I've been too busy with work. Took my uncle and mom to the Norton Simon museum around a week ago. This is a depiction of David vs Goliath and it is one of my favorite paintings there because it is just hilarious. Sorry! Been lagging on posting lately. Very busy with work and guitar lately. This is an Italian influenced salmon dish. Ingredients: 1 filet of salmon 1 large bunch of basil 1 head off garlic 1 large shallot 4 to 6 whole tomatoes Olive oil Salt and/or fish sauce to taste Prep: Cut the salmon into large chunks Chiffonade the basil into 2 to 3 mm Crush the garlic leaving in some of the skins Finely the shallots Dice the tomatoes (5 mm) - any tomato variety will do but juicier varieties will give you more sauce in the end. Recipe: 1. Heat a couple Tbsp olive oil in a large pot. 2. Add the garlic and sauté until golden brown then add the shallots and a pinch of salt and sauté until the shallots are golden too. 3. Add all of the tomatoes and sauté to release juices and breakdown the tomatoes. Roughly 5 minutes. 4. Add half of the basil and sauté an additional minute. Taste the sauce and add fish sauce or salt to taste. Sauce should be balanced. 5. Add the salmon, try not to layer it if at all possible. Cover and simmer low. If you are using wild salmon, you may need to add water to your sauce. Farmed salmon will release a good amount of liquid. 6. Cook for 7 to 10 minutes. You want to turn the heat off when the salmon pieces are slightly undercooked in the center. Put the rest of the basil on top and leave on the stove for another 2 minutes. The salmon will continue to cook in the sauce and the basil will cook just enough. 7. Serve either as is, over steaming white rice, or even on top of pasta. Birthday dinner at @theparksfinest One of my fave birthday meals in a while! The food was great! My absolute favorite dish was Mama Leah's Coconut Beef, probably because it surprised me and it is a Filipino comfort dish. The meat was great too! That short-rib was so tender and yummy! Their bibinka cornbread is something special too! What really made it great though was the service. Everyone was so nice and our server Christine was just so warm, friendly and sweet! She took such good care of us, including giving us some elote to try, buko-pandan flan and extra bibinka cornbread to take home. Really really awesome people... Btw, that buko-pandan flan was the smoothest, creamiest, best flan I've ever eaten. Great flavor, but not too sweet or too rich. The Park's Finest!
