The summer heat is sizzling up our spring season. Cool yourself off with a fun chilled soup made with Kiwano Horned Melons from @melissasproduce! The beautiful spiky, golden-orange shell beholds a succulent, edible seed-filled emerald green interior. The flavor is reminiscent of cucumber, melon, and lime. Chilled Kiwano Charentais Soup Shooters Ingredients: 2 Kiwano Horned Melons (see preparation notes below) 1 Charentais Melon, rind removed, seeded, rough chopped 2 mini cucumbers, peeled, rough chopped 1 cup orange juice 2 tbsp lime juice 2 tbsp agave syrup 1 tsp fresh ginger, grated 5.3 oz vanilla coconut/soy yogurt alternative ¼ tsp salt 4 sprigs mint Directions: 1. Kiwano horned melon preparation: Place kiwano melons lengthwise on a cutting board. Cut in half so you have 4 cup-like halves. Using a spoon, remove green seeded fruit and set aside in a bowl. Use a boning knife and cut the stringy membranes from the inside. Use a spoon to scrape out. Discard scraps or place in compost. Wrap melon "cups" in plastic wrap and place in a resealable bag. Refrigerate until ready to serve. 2. Place all ingredients, except mint and reserving ¼ cup of kiwano melon seeds for garnish, into a blender and. Blend on high for 1-3 minutes until smooth. Place in a covered container and refrigerate overnight. 3. To serve, place kiwano melon "cups" on a plate. Pour chilled soup into cups. Place a sprig of mint into each cup. Float a spoonful of kiwano melon seeds on top.
