Pickles (known as such in Australia, Canada and the United States, or gherkin in the UK) are cucumbers pickled in a brine, vinegar or other solution and left to ferment for a period of time. Typically, they are placed in a glass, wooden or ceramic container, and occasionally include a variety of spices. Traditionally used spices include garlic, horseradish, whole dill stems, white mustard seeds, grape, oak, cherry, blackcurrent and bay laurel leaves, dried allspice fruits and salt. The container is then filled with cooled, boiled water and kept under a non-airtight cover for several weeks depending on taste and external temperature. The more salt that is added, the more sour the cucumbers become. Salt-only brined cucumbers do not keep as long as cucumbers pickled with vinegar, and usually must be refrigerated.
