Vegan Laphet Thoke / Burmese Fermented Tea Leaf Salad (Burma Superstar Copycat)
Ladies food fun! Before returning to her home in Chin State, Myanmar, one of our friends invited us for a special traditonal meal, which took her most of the day to prepare for us. She taught me the importance of slow, continuous stirring over low heat. Later, we feasted on tofu nway - a delicious creamy noodle dish seasoned with aromatics - and finished with the famous lahpet thoke (fermented tea leaf salad). Since her place is quite warm and squishy, we opted to go picnic-style to enjoy the cooler breeze on the patio. By the end of the evening, we, and even the mozzies, were duly satisfied.
