I received Pasta Every Day over the holidays, and I must say that it’s a really great pasta cookbook because it both respects the culinary history of pasta but also looks for fresh ways to enjoy it. The chapters are set up as doughs, then shapes/cuts, and finally sauces; the idea is to be able to mix-and-match pasta and sauce, and recipes for the sauces come with a list of suggested optimal shapes/cuts. 

I really dug this braised onion ragu because I never thought to combine tomato paste with caramelized onions, and that is a match made in culinary heaven. I upped the ante with some homemade meat stock (mostly beef but some chicken) which really gave the sauce body, and I definitely want to make it again to get all of the elements just right.
