We were invited to dinner on Saturday night by our new friends from Syria. Not only did they prepare a feast for at least 20 people and we were just 6 adults, they kept piling up the food every time they saw I was almost done with each dish. Let me be clear that these boys are also healthy eaters so the portions might not have seemed too big to them. They were fantastic hosts :)
We didn’t want to be rude (btw the food was delicious) so we just kept eating and trying to breathe when we had an opportunity. There was so much rice. Each dish was to be eaten with rice. I think I must have eaten at least 3 plates/bowls of rice. They explained that since they can’t find many of their food staples here in Norway they eat rice with every thing.
It’s now Sunday and I’m still trying to get everything out of my system. I decided to eat a few potato wedges with my dinner and had a few slices of gluten-free pizza at lunch. I guess you could say after weeks of being stable my blood sugar is now spiking. I also decided it wasn’t going to be the end of the world to take a short 1-2 day break. Tomorrow I go back to my low-carb regime. I spent the afternoon meal planning so it shouldn’t be so bad.
This low-carb diet has really helped me get back into a healthier routine. I have more energy, I feel less bloated, and I’m not suffering from the usual discomfort after eating.
