Ingredients: 2 boneless, skinless chicken breasts. 1 tablespoon olive oil. 1 teaspoon chili powder. 1/2 teaspoon cumin. Salt and pepper to taste. 8 small whole wheat tortillas. 1 cup shredded lettuce. 1 cup diced tomatoes. 1/2 cup diced red onion. 1/2 cup chopped cilantro. 1/4 cup Greek yogurt. 1/4 cup salsa. 1 lime, cut into wedges.
Instructions: Put chili powder, cumin, salt, and pepper in a bowl and mix them together. Cover the chicken breasts with the spice mix. Grill for 6 to 8 minutes on each side, or until the chicken is fully cooked. After letting the chicken rest for a while, cut it into strips. For about 30 seconds on each side, warm the tortillas up on the grill. Put together tacos: On each tortilla, put chicken strips, lettuce, tomatoes, red onion, and cilantro.
