Personally, I feel like Mashima had trouble making huge changes to the status quo in the latest arcs, and the story really suffered from it (among other huge flaws, of course)

Absolutely! It was less noticeable in the earlier arcs, but then Mashima had two timeskips and tried to accelerate the story towards a dramatic endgame FT was never really designed for.

Ikumi Mito & Akira Hayama from Shokugeki No Soma both have pretty tan skin in the manga

Thank you for the suggestions! I’ve already made a batch of Akira Hayama icons, however, none for Ikumi Mito as it’s such a shame since she’s so cute!

Aside from the most obvious/well known I can think of: There's (at least) two dark-skinned characters in Shounen Oujo (By Yukihiro Utako) that are involved with the main group. The style of that manga is pretty nice but I haven't seen many icons of them, so making a few will surely help!
