Can you tell when someone is skilled at Occlumency and does it make you more suspicious of them? Have you ever seen something in someones mind you wish you hadn't?
It depends on their intent. At times someone who is skilled will choose to lock me out of their mind entirely, or else passively have enough walls up where the complete lack of any thoughts coming from them is notable. I recognize in that case they are a skilled occlumens and are keeping me out. In these cases it is either a) they are being interrogated and their primary objective is to keep me out at all costs or b) they are known to me as an exceptionally powerful individual with particularly strong passive shields, in which case it is annoying, but not usually concerning. Bella can fall into this category, as does Eagle and, unfortunately, Albus.
Other times - in the case of attempted deception, it can be harder. They do not want to attract suspicion by suddenly locking me out entirely - it would make me more suspicious. No, these people have partial walls, certain facts, feelings and memories hidden in vaults, and then leave the harmless, useless information out in the open. Many a time I do not even know they had trained in occlumency - they keep it hidden. It takes time to weed these people out. Luckily there are not many people who have achieved this skill level, and most, such as Bella, are loyal to me.
Do you look into death eaters heads during meetings to see what they are daydreaming about?
Then do you ask them questions on whatever they are daydreaming about to embarass them?
I do, and I have.
A large number of my inner circle has casual walls up in place out of habit, but the general ranks...it is terribly easy to just...peek.
Of course you need to be careful. You may see some things you wish you had not.

You may choose to merely savor this one privately, get used to the idea of matchmaking and what makes a desireable match. However, if you do choose to act, I must say good luck - and who knows, perhaps he will end up making a move first. That is the thing with such relations, you can never be entirely certain what the other person is thinking. This is half the reason I became a legilimans - I hate secrets being kept from me.

Tom raised an eyebrow at the terminology. “Are you Norse?” he asked, tilting his head. “I had no idea you could all be different backgrounds. And you do have a school. Amazing. How old are you? How old is the youngest in the system? Do they age? Is this too many questions?”
Tom laughed. “I do know legilimency. Do you think I could get past your gatekeeper, to see inside? Well, I suppose that is what we will be trying to find out.”

I suppose....perhaps. The same stipulations would apply that I had placed on the idea of a Weasley - passing the trials, a very thorough searching of her mind, and the murder of her father.
"We started off with... four? And then yeah we've gained more as time went on," Benjamin explained.
He laughed at the joke. "As cool as that would be, sadly we have no Heimdall."
"Ok, so I'm gonna go speak to our gatekeeper. I may leave front, I may not leave front, I don't know, sometimes it's difficult. And someone else may front, or someone else may not front, you may have no one. Anyway, see you!"
And someone else did end up fronting, though Benjamin was still partially there. Genevieve was back, and she was a little confused.
"Oh, we're still here?" she asked. "Oh um, hello Professor Riddle. Um, it's Genevieve again. I think."
Then a while later Benjamin came back.
"Okay hi, I'm back. Oh hi, Genevieve. Anyway, gatekeeper thinks it's a terrible idea, but I bribed them and so you can get through now."
Genevieve had no idea what was going on, so she just awkwardly stood back and let Benjamin have most of the control.
Professor Riddle nodded to Genevieve. "Hello. Benjamin is certainly a character, no? We have been chatting about the inner working of your mind - ah, hello Benjamin. Excellent. Shall we try now? I'm using illegitimacy to read your collective minds. It should be fun.
