Ingredients: 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes. 2 tablespoons extra virgin olive oil. 2 cloves garlic, minced. 2 teaspoons dried oregano. 1 teaspoon dried thyme. 1 lemon, zest and juice. Salt and pepper to taste. Wooden skewers, soaked in water for 30 minutes.
Instructions: In a bowl, combine the olive oil, minced garlic, dried oregano, dried thyme, lemon zest, lemon juice, salt, and pepper. Mix well to create the marinade. Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes to marinate, or overnight for best results. Once the chicken has marinated, thread the chicken cubes onto the soaked wooden skewers, leaving a little space between each piece. Heat a non-stick skillet or grill pan over medium-high heat. You can also use a cast-iron skillet for this. Place the chicken skewers on the hot skillet and cook for about 3-4 minutes per side, or until the chicken is cooked through and has a nice golden char.
