Let’s taco about my first Lion’s Mane harvest! 😃 . Might have let my @farwestfungi minifarm go a wee bit long—there was a lot of fruiting even behind the blooms in the first photo 😬 . But had enough for “fish tacos” & plenty of inner mushroom to shred for krabby cakes later 🥳 . Lion’s Mane mushrooms are easy to pull apart yet maintain a firmness & texture akin to white fish. I pan fried dry for a few minutes to expel some water, then with cumin & paprika in a little olive oil. . The slaw is napa & red cabbage, jalapeño, avocado (or guac like I had), garlic, lime juice, garlic chili sauce, & fauxgurt. (Voice of Experience says use unsweetened PLAIN, not vanilla even if that’s all you have on hand 🙄) . Lion’s Mane tacos taste great, keep a good texture (not chewy!), & are hella healthy for you 🤓👍 .
