You can enjoy this Light Ranch BLT Chicken Salad Sandwich instead of the traditional BLT. Ranch seasoning and turkey bacon give it a lot of flavor, and it's a filling but lighter choice for lunch or dinner.
Ingredients: 2 cups cooked and shredded chicken breast. 1/4 cup light mayonnaise. 1/4 cup plain Greek yogurt. 2 tablespoons ranch seasoning mix. 1/4 cup chopped green onions. 1/4 cup chopped celery. 1/4 cup cooked and crumbled turkey bacon. 8 slices whole wheat bread. 1 cup lettuce leaves. 1 large tomato, sliced.
Instructions: In a large bowl, combine the shredded chicken, light mayonnaise, Greek yogurt, ranch seasoning mix, green onions, celery, and turkey bacon. Mix until well combined. Toast the slices of whole wheat bread, if desired. Evenly divide the chicken salad mixture onto 4 slices of bread. Top each with lettuce leaves and tomato slices. Place the remaining bread slices on top to form sandwiches. Slice each sandwich in half and serve.
