Margarita Cupcakes are a tasty treat that taste like the classic cocktail. They have the sour taste of lime and the boozy taste of tequila. These cupcakes will be a hit at your next party and are great for any fiesta or special event.
Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 tsp baking powder. 1/4 tsp salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. Zest of 2 limes. 1/4 cup fresh lime juice. 1/4 cup tequila. 1/4 cup milk. 1 tsp vanilla extract.
Instructions: Warm up the oven to 350F 175C and put paper liners in a cupcake pan. Mix the flour, baking powder, and salt together in a bowl with a whisk. Melt the butter and mix it with the sugar in another bowl until the mixture is light and fluffy. One at a time, add the eggs and mix well after each one. Add the lime zest and mix it in. In a different bowl, mix the milk, vanilla extract, lime juice, and tequila. Add the dry ingredients and the lime-juice-tequila mixture to the butter-sugar mixture one at a time, beginning and ending with the dry ingredients. Don't mix any further than that. Fill each cupcake liner about two thirds of the way to the top with batter. Bake for about 18 to 20 minutes, or until a toothpick stuck in the middle of a cupcake comes out clean. After the cupcakes have cooled in the pan for a few minutes, move them to a wire rack to cool all the way down. As the cupcakes cool, make the frosting of your choice. For example, you could make a margarita-flavored buttercream or a lime-flavored cream cheese frosting. Once the cupcakes are completely cool, use a lot of your favorite frosting to cover them. If you want, you can add more lime zest or wedges of lime as a garnish. Take your Margarita Cupcakes out and enjoy them!
