You can eat these Vegan Chickpea Burritos for a tasty and healthy plant-based meal. Because they are tasty, full of protein and fiber, they are great for lunch or dinner. Spices are added to the chickpeas, and the burritos are full of fresh vegetables and a tangy lime kick. Fun to make and even more fun to eat!
Ingredients: 2 cups cooked chickpeas. 1 cup diced tomatoes. 1/2 cup diced red onion. 1/2 cup diced bell pepper. 2 cloves garlic, minced. 1 tsp cumin. 1 tsp paprika. 1/2 tsp chili powder. Salt and pepper to taste. 4 large whole wheat tortillas. 1 cup cooked brown rice. 1 cup shredded lettuce. 1/2 cup diced avocado. 1/2 cup vegan sour cream. 1/4 cup chopped fresh cilantro. Juice of 1 lime.
Instructions: Put the diced onion and bell pepper in a large skillet with a little water. Cook for about 5 minutes, or until the vegetables get soft. To the pan, add the chili powder, cumin, paprika, and minced garlic. After two more minutes, the food should smell good. Add the cooked chickpeas and tomato dices and mix them in. Add another 5 to 7 minutes of cooking time until everything is hot. It only takes 30 seconds in the microwave or a dry pan to warm up the whole wheat tortillas. Place a tortilla on a clean surface to start putting together each burrito. Put a quarter cup of brown rice in the middle of the tortilla. Put a big scoop of the chickpea mix on top of the rice. Shred lettuce, dice avocado, vegan sour cream, and chopped cilantro and put them on top. Add fresh lime juice and squeeze it over the fillings. First, fold the tortilla's sides in. Then, start rolling it up from the bottom and tuck the sides in as you go. Do the same thing with the rest of the burritos. You can serve the vegan chickpea burritos right away or wrap them in foil to take with you for a quick meal on the go.
