This would be a most diabolical dungeon trap.
It acts like a fluid when the sand is aerated but once the air flow stops, everything floating in - and under the surface - would be trapped by the full weight of the sand.
You could have a sandy floor in a tunnel which would suddenly turn into a liquid thus making the entire party sink like a stone up to their necks - especially the heavier ones - then suddenly have it turn back into heavy sand and trap them there.
...that is when you release the rats.
