Vegan Lomper (Norwegian Potato Flatbread)

Combating the darkness in my life by creating. Started a new starter (because I am a gluten for punishment) and tried a new recipe (inspired by the lady who gave out potatoes for Halloween).

Lomper

Traditional Norwegian Potato Pancakes/Flatbread

(The photo is by from the cookbook Restekjærlighet, because mine were kinda... Not pretty, ahaha)

🥔 500g mashed potatoes (leftovers are perfect for this! You can also use instant mashed potatoes, or mash some leftover potatoes after dinner)

🥔 1,5-2 dl all purpouse flour

🥔 A little bit of salt if you didn't add salt to your mashed potatoes

Mix the flour with the mashed potatoes until they become a dough that is possible to handle.

Divide the dough into 6-8 pieces. Use a rolling pin and roll each piece into 15-20 cm/diametere circles. They will usually be 2-3 mm thick.

Toast them one at the time in a dry/unbuttered skillet, until soft with light brown spots. Stack the finished Lomper on a plate and cover with some clean cloth.

Serve with butter, sugar and cinnamon, nutella, wrapped around hot dogs (very common outdoors food!), with fish/roe, sour cream and onion, or with melted cheese!
