In Unfinished Tales, there is a chapter describing Gandalf’s account of preparing for the journey to Erebor.  Turns out his meeting with Bilbo in the beginning of The Hobbit was actually not his first time visiting Bilbo’s house for the purpose of recruiting him as the burglar.  He had been there before only to be told by the neighbors that Bilbo had gone away on some trip and didn’t know when he would be back and that he did this quite often.

After this minor inconvenience of tracking him down, no wonder the casual ‘good morning’ he got pissed him off so much.
