Ingredients: 1 head cauliflower, grated. 2 tablespoons coconut oil. 2 eggs, beaten. 1/2 cup diced bell peppers. 1/2 cup diced onions. 2 cloves garlic, minced. 1/2 cup diced carrots. 1/4 cup soy sauce or tamari. 1/4 cup chopped green onions. Salt and pepper to taste.
Instructions: In a large skillet, heat coconut oil over medium heat. Add eggs and scramble until cooked. Remove from skillet and set aside. In the same skillet, add bell peppers, onions, garlic, and carrots. Saut until vegetables are tender. Add grated cauliflower to the skillet and cook for 5-7 minutes, stirring occasionally.
