age 7: the sharp, electric green of my maa chutneys—coriander chutney and pudina chutney—smacked onto my after-school sandwich. it was the taste of being taken care of.
age 15: the dark, mysterious imli chutney at the corner chaat stall, dripping off a plate of papdi. the taste of freedom and pocket money.
age 22: the desperate, glorious schezwan chutney from a jar, mixed into instant noodles in a dorm room. the taste of independence (and poor planning).
age 30: trying to recreate the hotel chutney from that one trip to Chennai. the taste of nostalgia you can’t quite pin down.
yesterday: making kothamalli chutney for the first time, the smell of fresh coriander roots taking over the kitchen. it tasted… like now. like trying to become the person who knows how to make the things they love.
every jar, every batch, every chutney recipe scribbled on a sticky note is a bookmark in a life. even the weird ones. especially the weird ones. (looking at you, beetroot chutney i attempted last fall. you were pink and confusing, but you were a chapter.)
