Candy Corn Parfaits
Ingredients
4 cups vanilla ice cream or frozen vanilla yogurt
4 cups orange sherbet
4 cups lemon sorbet
Yellow food coloring (if desired)
Candy Corn or Candy Pumpkins, for garnish
Directions
1. Start by removing the vanilla ice cream from the freezer and let it soften at room temperature for about 5 - 10 minutes. Place the softened ice cream in a bowl and beat with the hand mixer on low speed for about 20 seconds, until it is of spreading consistency. Then place the ice cream in a large piping bag with a large plain tip and pipe an even layer of ice cream into the bottom of each glass. Place the dessert glasses in the freezer to refreeze the ice cream.
2. Meanwhile, remove the orange sherbet from the freezer and let it soften at room temperature for about 5 - 10 minutes. Place the sherbet in a bowl and beat with the hand mixer on low speed for about 20 seconds, until it is of spreading consistency. Place the softened sherbet in a large clean piping bag with a large plain tip. Remove the glasses from the freezer and pipe a layer of the sherbet on top of the ice cream. Return the glasses to the freezer.
3. Finally, remove the lemon sorbet from the freezer and let soften at room temperature for about 5 - 10 minutes. Place the sherbet in a bowl and beat with the hand mixer on low speed for about 20 seconds, until it is of spreading consistency. Add a little yellow food coloring, if desired. Place the softened sorbet in a large clean piping bag with a large plain tip. Remove the glasses from the freezer and pipe a layer of the sorbet on top of the orange sherbet. Return the glasses to the freezer until serving time. The parfaits can be made several days in advance of serving.

What You'll Need
1-1/2 cups vanilla ice cream
1 cup strawberries, hulled
1/2 cup pound cake pieces (store-bought or homemade)
1/4 cup crushed graham crackers
2 tablespoons honey

Make sure to grind the granules finely in a food processor.
What You'll Need
2 egg whites, at room temperature
Pinch of cream of tartar
1/2 cup finely ground cotton candy granules
Directions
1. Preheat the oven to 170 degrees F. Line two cookie sheets with parchment paper. Fit a large pastry bag with a large French piping tip.
2. Place the egg whites in a spotlessly clean bowl and whip them with an electric mixer on medium speed until frothy.
3. Stop the mixer and add the cream of tartar. Start the mixer again and continue to beat the egg whites.
4. Once the egg whites form soft peaks, increase the speed to high and gradually add the cotton candy sugar, a little at a time.
5. Beat the egg whites until they are very shiny and hold stiff peaks but are not dry or crumbly, about 7 minutes.
6. To make sure the sugar has completely dissolved, rub a bit of the meringue between two fingers to see if any granules of sugar remain. If grains are present, continue to beat the meringue until the sugar has fully dissolved.
7. Spoon the meringue into the pastry bag and pipe onto the prepared cookie sheets. Meringue can also be dolloped onto parchment by heaping spoonfuls if you have no piping bags or decorator tips.
8. Bake the meringues for 90 minutes, turning them halfway through the cooking time to ensure even cooking.
9. When the meringues are done, turn off the oven and let them stand in the closed oven for several hours or overnight. The meringues should be hard and dry to the touch, and you should be able to easily lift them from the parchment.
