The Philippines and Spain share a deep and colorful history and what better way to celebrate these two cultures than through their vibrant and intertwined culinary traditions. This April, Madrid Fusion Manila 2015, the world’s most anticipated epicurean event will celebrate the two country’s 300 years worth of shared connection through food in one global event where the world’s top chefs showcase culinary innovations and cutting-edge techniques, ingredients and recipes taking food and dining to the next level. The Hungry Kat was invited to the media launch of this grand foodie event at Sarsa Kitchen + Bar at the Mall of Asia last Thursday where a cuisine demonstration was also conducted by some of the Philippine representatives to Madrid Fusion Manila.
SM Supermalls is the official partner and host to this historic affair and welcomes Madrid Fusion as it comes to Asia for the first time and puts Manila at the heart of culinary interest worldwide. Madrid Fusion Manila 2015 is happening on April 24 to 26 at the SMX Convention Center Mall of Asia in Pasay City and this highlights the Philippines as an haute cuisine destination in Asia. Set to captivate Manila with their culinary virtuoso are Spain and Asia’s legendary Michelin-starred chefs including Andoni Luis Aduriz, Elena Arzak, Quique Dacosta, Ramón Freixa, Francis Paniego, Paco Roncero, Mario Sandoval, Paco Torreblanca, André Chiang, and Alvin Leung. A trade exhibition will focus on the finest Spanish and Filipino products from Spanish wines and cheeses, to the Philippines’ world-class exports such as rice, cacao, coffee, mango, coconut, and liquors.
Presenting the Philippines’ own diverse and imaginative epicurean traditions are chefs Fernando Aracama, Margarita Forés, J Gamboa, José Luis “Chele" Gonzalez, Pepe Lopez, Rob Pengson, Bruce Ricketts, Myrna Dizon, Claude Tayag, and Juan Carlos de Terry. Three of the Philippines’ finest representatives to the Madrid Fusion Manila Congress, Chef Bruce Ricketts, Chef Rob Pengson and Chef Claude Tayag, with a special participation of Chef JP Anglo of Sarka Kitchen, showcased their mastery in cooking to the media guests last April 16.
Chef Bruce Ricketts, who is known for his masterful creations at Mecha Uma in Bonifactio Global City and Sensei Sushi in BF Homes Paranaque, started the cooking demonstration with his Seared Prawns with Marinated Saba Avocado & Burnt Coconut Vinegar. We never think of Filipino dishes as being fancy but this one gives us that sophisticated presentation but still using Filipino ingredients we are familiar with.
Chef Rob Pengson was up next to present his own dish. Chef Rob is popular for his numerous commercial appearances as well as his restaurant The Goose Station in Bonifacio Global City which I have already visited on one of my dates. He showed us his dessert creation, the Mango Tapioca Surprise, which is definitely a great way to cap off any meal.
Chef Claude Tayag, which host JJ Yulo funnily called as the “Pepe Smith” of the Filipino culinary world, gave us a brief history about the dish that all Filipinos can call their own, the Adobo. This traditional dish was presented by Chef Tayag in two variants, the Adobo ni Juan Tamad which had plenty of sauce, and the Adobong Puti which was dry and without any sauce. Personally, I always like my adobo with lots of sauce.

Lastly, Chef JP Anglo presented his own dish, the Bangus Spring Rolls with Talangka Vinegar and Batikulon Mang Tomas Sauce. Filipinos really use Mang Tomas sauce with anything and everything but it was still surprising to see it paired with spring rolls.
Throughout the presentation, the media was also treated to a variety of Filpino pulutan and street food items courtesy of Sarka Kitchen + Bar and Chef JP Anglo.
Aside from the pork barbeque, chicken skin, isaw, and tokwa on stick, we also feasted on spring rolls, lumpia, and very sinful sisig. These are items we can easily call Filipino comfort food at its finest.
SM, in partnership with Department of Tourism and Madrid Fusion Manila, shares this great celebration with its fellow Filipinos through festive activities in SM Malls nationwide. A feast of everything delectably Filipino-Spanish shall delight foodies at the Gourmet Weekend Market from April 24 to 26 at SM Mall of Asia. A premium selection of cheese, tapas, wine, ingredients, local finds and special bundles shall be made available in partnership with SM Supermarkets. Aside from that, new Spanish Food Specials that reflect culinary innovation will be available this April at select SM Mall of Asia restaurants where special dishes with Spanish influence are sure to bring out your inner foodie. Savory goodness awaits mall-goers of SM Aura Premier which shall host its own Spanish-themed fiesta with music, dancing, food and drinks on April 19 at the Sky Park lawn. Asistí al taller de cebiches que impartieron en Madrid fusión la "Pandilla leche de tigre" que la forman 5 cocineros peruanos todos con restaurantes en Lima pero que hacen cebiches y platillos cada uno de su zona de origen de Perú. Fue muy interestante ver las diferencias entre los cebiches, tanto a nivel técnico como a nivel de productos,y los trucos que nos dieron, como solamente apretar el limón hasta la mitad a la hora de exprimir para no añadir amargos a la leche de tigre.

El pasado 23 de enero tuvo lugar un encuentro denominado “Alimentación conCiencia”, dentro de las actividades de Madrid Fusión. Allí, varios expertos abordaron cuestiones desde la tecnología de los alimentos, la psicología alimentaria o la evolución de la gastronomía y su impacto en el PIB de España.
Para ello, básicamente, se toman células madre musculares de la vaca (las que, en la vaca, se transforman en su tejido muscular), se las “alimenta” en unos moldes y se les somete a tensión o a estimulación eléctrica para que crezcan. Ya tienen preparada una hamburguesa, aunque todavía no sabe igual que la carne normal. “Estamos trabajando en ello”.

El objetivo es obtener “carne” más barata, disponible para más gente y menos contaminante: lo justifica diciendo que el crecimiento de la población y el aumento del consumo de proteína animal provocan que no haya alimentos de este tipo para todo el mundo, que exista una sobreexplotación del suelo para producir alimentos para las vacas, que se contamine la atmósfera con los gases expulsados por las vacas…
José Miguel Mulet, profesor de biotecnología en la Universidad Politécnica de Valencia, hablaba de los alimentos transgénicos de la manera más natural del mundo. Como él dice: “siempre hemos buscado domesticar la naturaleza”. Lo que es bueno preguntarse es hasta dónde debemos llegar y qué nos ha ido ocurriendo a raíz de querer domesticar determinadas partes de la naturaleza. Una cuestión es realizar un injerto en un árbol para obtener fruta de otras características que, por cierto, la naturaleza se encarga de realizar esa mezcla de genes y de que sea viable y, otra cuestión, es que un señor en un laboratorio introduzca genes y modifique lo que la naturaleza ha generado durante tantos años por razones que, todavía, no conocemos del todo.
También nos puso al día de que la ropa que llevamos está fabricada con algodón transgénico, como los billetes de euro, las compresas, los detergentes con enzimas, el líquido de las lentillas, etc. Él opina que es de tontos permitirlo en todo menos en la agricultura. ¿Alguien se ha dado cuenta de la diferencia entre pagar con un billete y comérselo?
Me parece bien que la ciencia progrese, pero ¿a costa de qué? ¿Hasta dónde debe llegar la ciencia? ¿Hasta dónde debe llegar su alcance como fundamento de lo que es o no es, de lo que se llaman “evidencias”?
No hay alimentos para todos, dicen algunos. Hay gran despilfarro de comida, se come en grandes cantidades lo que nos viene en gana. ¿Y lo único que se le ocurre a algún “científico” es seguir perpetuando ese comportamiento, en lugar de ver que hay mucho que trabajar en la educación y en la optimización de los recursos? ¿Y si dejara de desperdiciarse más del 40% de la comida? ¿Y si educáramos a las personas para que coman más variedad de alimentos en cantidades razonables y saludables?
