Potato Gnocchi and Broccoli Soup
Serves 4-6
What you’ll need:
1 tablespoon olive oil
1 cup chopped celery
3 garlic cloves, crushed
1 tbsp dairy or vegan butter
2 cups chopped broccoli
2 cups vegetable stock
2 cups oat milk (or other plant milk)
Salt and pepper
1 (14 oz) package potato gnocchi with a tablespoon of olive oil
2 tbsp all purpose flour and a little bit of water
1 cup dairy or plant based cheddar cheese
fresh parsley for garnish
fresh thyme for garnish
Process:
To a soup pot add olive oil and chopped celery over medium heat. Stir to combine. Heat for 2-3 minutes. Turn heat to low and add garlic. Stir to combine. Add dairy or vegan butter and let melt. Now add chopped broccoli, vegetable stock, oat milk, salt and pepper. Heat for 10 minutes.
Meanwhile cook gnocchi according to package instructions adding the olive oil after cooking so they don’t stick together. When done set aside.
While this is cooking mix together flour and water. Pour into soup pot to thicken liquid. If this doesn’t suit your taste add a bit more flour and water to thicken soup or leave out all together if you don’t like a thick soup base.
To serve add a generous amount of broccoli soup to a bowl and top it with gnocchi, cheese, fresh parsley and fresh thyme.
