PAL'S THROW EVERYTHING YOU HAVE IN THE FRIDGE MEAT LOAF MUFFINS The ultimate answer to the dreaded dinner question is right here. On this given evening I was not in the mood to find a recipe, stop at the store, slave over the meal, and then clean up the disaster I'm known to leave behind so I channeled my inner Jackie (the fabulous master of use what you have) and started to take a mental inventory of what was in my fridge. Onion...breadcrumbs..eggs..string beans..ketchup..I could do something with this! All I had to stop for was turkey meat and a bag of salad and I was totally fine with that. Here's how I made it work.. Chop and sauté the onion Combine the ground turkey, 1 egg white, 1 tablespoon of breadcrumbs, 2 table spoons of ketchup, salt, pepper...I put a couple of pinches of dried parsley in there as well as some Worcestershire sauce I also found hiding in the fridge (about a tablespoon). When the onions are cooked through..throw them in there too and mix it up. Spoon this mixture into a muffin tin and put them in the oven...350 for about 20 minutes or so. After 20 minutes..check them..cut into one if you have to..nobody likes raw mini meat loaves. I had also come across some left over grated cheddar cheese from tacos last week and when the loaves were just about done I sauced them with a tad more ketchup and sprinkled some cheese on top. Stick them back in the oven for about 5 more minutes and enjoy! P.S. The leftovers were delicious too
