Malassadas.
I was able to get my hands on some malasadas, a Portuguese donut. It was sold at a stall during a local street festival.
Malassadas are a delicious Portuguese doughnut that is crispy on the outside and fluffy on the inside. They are a popular treat in Portuguese cuisine and are often enjoyed during special occasions and festivals.
Ingredients: 2 1/4 teaspoons active dry yeast. 1/4 cup warm water 110F or 45C. 3/4 cup granulated sugar. 4 large eggs. 1/4 cup unsalted butter, melted. 1 cup whole milk. 1/4 teaspoon salt. 4 cups all-purpose flour. Vegetable oil, for frying. Powdered sugar, for dusting.
Instructions: In a small bowl, dissolve the yeast in warm water and let it sit for 5-10 minutes until frothy. In a large mixing bowl, whisk together the sugar, eggs, melted butter, milk, and salt. Add the yeast mixture to the wet ingredients and mix well. Gradually add the flour and knead the dough until it becomes smooth and elastic. This will take about 10 minutes. Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for 2-3 hours, or until it has doubled in size. Heat vegetable oil in a deep fryer or large heavy pot to 350F 175C. Scoop a spoonful of dough and carefully drop it into the hot oil. Fry until golden brown, turning occasionally, about 4-5 minutes. Using a slotted spoon, remove the malassadas from the oil and drain on paper towels. Dust the warm malassadas with powdered sugar and serve immediately.

Cook Time: 20 minutes
