Mango Jam
I’ve been making a lot of Caribeean dishes lately. Not only because the food is tasty, and pairs well with abundant heat and sunshine. But also because I’ve spent a blissful fortnight in Guadeloupe last Summer and I miss it. I miss, for instance spreading pineapple or mango jam on fresh buttered bread in the morning and taking my breakfast outside. All it takes to recreate the memory is a very ripe mango and a few spices, and there you have your Mango Jam! The weather is even inviting to have brekkie outside, all that’s missing is the green lizards running about and the sound of the waves...
Ingredients (makes 1 jar):
1 ripe (12-ounce) mango
1 thumb-sized piece fresh ginger
a pinch of saffron threads
1/2 cup water
1 lime
1/4 teaspoon freshly grate nutmeg
1/4 cup pure cane sugar
Cut mango either side of the pit, and cut the flesh into small dices. Spoon into a medium saucepan. Cut mango flesh off the pit into the saucepan as well. Grate in fresh ginger, and add saffron threads. Stir in water and bring to the boil over medium-high heat. Squeeze in the juice of the lime and add nutmeg. Boil, stirring often, until mango softens and mixture reduces, about 5 minutes. Stir in cane sugar, and cook, stirring constantly, until sugar dissolves and jam thickens, a couple minutes more.
Spoon hot Mango Jam in a clean, sterilised jar (boiled with the in a pot of boiling water, 5 minutes; then dried.) Close lid tightly and let cool completely.
Store Mango Jam in a cool, dark place until using, and then up to a month in the refrigerator once opened.
